Layered Jelly Cups

This year for my littlest bear's superhero birthday party, I tried to focus on only making a few food treats that required minimal work but had big impact. These layered jelly cups certainly fit the bill. They're great because you can tailor the colours to your party's theme and kids love them. Read on for directions.

This is a very easy dessert to make, but just remember it's best to give yourself a couple of days in advance of the party to make them, as each layer needs time to set before the next layer can be added.

Ingredients:
(serves 20)

  • Three boxes of jelly (I used Aeroplane jelly in berry blue, lemon and strawberry but any brand will work
  • 2 cans of condensed milk
  • Box of gelatin
  • 20 small plastic cups
Step 1: Start this first thing in the morning. Make your jelly for the first layer (will sit on the bottom of the cup). Empty both packets of jelly powder into a 4 cup pyrex, then add two cups boiling water. Stir until the jelly powder has dissolved. Next add 2 cups cold water, mix well. Set out your 20 plastic cups and fill each with 1/4 cups of jelly mixture. This amount may vary depending on the size and shape of your cups. Just keep in mind how much you used for this first layer so you can add a bit more for each subsequent layer if your using cups that are wider at the top than the bottom. Place them in the refrigerator for the day.

Step 2: Before you go to bed, remove the jelly from the refrigerator and following the directions on your gelatin box, make up one sachet of gelatin and once mixed add 3/4 of one can of condensed milk. Using a medicine dropper or baster measure around 8 to 10mLs of condensed milk gelatin and add it to the top of your first layer of jelly. Place in the fridge overnight.

Step 3: Repeat the above steps with the remaining jelly colours and condensed milk gelatin. Make sure to leave at least 8-10 hours between layers to ensure they've set, otherwise the condensed milk gelatin layer will bleed into the jelly layer.

Simple right!

Enjoy the jelly!
