School Snacks: DIY Fruit Roll Ups


Only a couple more weeks until the start of school, so now is the perfect time to start bulk making school snacks. Following on from last week's post, here is a really simple way to incorporate more fruit into your child's diet. Luckily the little bears LOVE any and all fruit but for those that find it difficult to get all 2-3 serves of fruit in each day, this might be a solution! This recipe is also a great way to use up fruit that may be overripe and would otherwise not get eaten. For the step by step recipe and more photos read on. 

For this recipe you'll need the following:
  • Food processor
  • 2 cups washed and prepared fresh or frozen strawberries (mango, peaches and other berries work well too)
  • 2 ripe bananas
  • 1-2 tablespoons honey
  • 1 tablespoon fresh lemon juice (optional)
  • Baking paper or silicone baking mat
  • two oven trays


Step 1: Start by preheating your oven to 100 degree Celsius (fan forced). Then line a oven sheet with baking baker or silicone baking mat. If using baking paper, make sure it is non-stick but also spray a thin later of cooking oil spray to keep the dried fruit from sticking.

Step 2: Place the strawberries, bananas, honey and lemon juice in a food processor and process until completely blended. It should have a smooth liquid consistency.  


Step 3: Pour the fruit mix onto the prepared oven sheets and bake in the oven for 2-3 hours depending on your oven. 


Step 4: Check after 2 hours. All of the fruit should be set (doesn’t jiggle) before removing from the oven but not hard. Once cool, either carefully remove the fruit leather from the baking mat and then transfer to baking paper, or if you used baking paper in the oven then simply leave it on the baking paper and cut up the fruit leather into long strips. Once in strips, roll it up and either secure it with washi tape or bakers twine.

Store in an airtight container or freeze.
